Sedani Rigati is an interesting variation of traditional straight tubular pasta. The name “Sedani” comes from the Italian word “sedano” (celery), describing its moderately long, tube-like shape. What truly defines this pasta is the distinctive “Rigati” feature – the delicate ridges running lengthwise along each piece.
Unlike smooth pasta varieties, the ridged surface of Sedani Rigati not only creates a pleasant texture when enjoyed, but also serves a functional purpose: it holds sauce exceptionally well. When paired with sauce, these grooves lock in flavor, ensuring every bite is richly coated and infused from the outside in. With its firm structure and signature al dente bite, Sedani Rigati is an ideal choice for thick and hearty sauces.

Ingredients
For the pasta:
- 1 pack of Sedani Rigati
For the filling:
- 300g chicken breast, cut into bite-sized pieces
- 200g fresh mushrooms (button mushrooms or king oyster mushrooms)
- 2 cloves garlic, minced
For the cream sauce:
- 200ml whipping cream
- 50ml unsweetened fresh milk
- 1 tablespoon unsalted butter
Seasonings:
- Salt and black pepper
- Fresh herbs (Parsley or Oregano)
- Grated Parmesan cheese
Instructions
Step 1: Pan-sear the chicken and mushrooms
Marinate the chicken breast with a pinch of salt, pepper, and olive oil for 15 minutes. Heat a pan and sear the chicken until golden brown on all sides. Remove and set aside.
Using the same pan, add a little butter and sauté the mushrooms until tender and fragrant.
Step 2: Cook the Sedani Rigati
Boil the pasta in salted water according to the package instructions (usually 9–11 minutes).
Tip: For the best texture, cook the Sedani Rigati to al dente. Before draining, reserve half a cup of pasta water to help create a smoother sauce later.
Step 3: Prepare the rich cream sauce
In a deep pan, sauté the minced garlic with butter until fragrant. Pour in the whipping cream and milk, and simmer over low heat.
Once the mixture starts to gently bubble, add grated Parmesan cheese and stir until the sauce slightly thickens. Season with salt and pepper to taste.
Step 4: Combine and enhance the flavors
Add the cooked Sedani Rigati, chicken, and mushrooms into the cream sauce. Toss gently for about 2 minutes, allowing the sauce to coat and seep into the “Rigati” ridges of the pasta.
If the sauce becomes too thick, add a few tablespoons of the reserved pasta water.
Step 5: Plate and serve
Transfer to a serving plate and sprinkle with fresh herbs and extra grated Parmesan on top.
