About Fiorella Fusilli
Fusilli is also known as spiral pasta or screw pasta because it resembles a spiral. The shape of Fusilli comes from the method of spinning the pasta on rotating rods until it becomes spiral-shaped and has many gaps on its surface. Thanks to this special texture, it holds a large amount of sauce and meat, enhancing the rich flavor of the dish.
Fusilli can be combined with many different sauces such as tomato sauce, meat sauce, and even cream sauce. Because it is made from durum wheat flour, Fusilli noodles retain their shape even when heated. Therefore, they are often used in salads because they won’t become soggy or break apart when mixed. Ingredients Needed (4 servings)
- Pasta portion: 250g Fusilli pasta
- Fresh vegetables:
- 1 green bell pepper (sliced into long strips)
- 2 large cherry tomatoes (halved) or a handful of small cherry tomatoes
- 1 cup zucchini (shredded or diced)
- 1/2 cup red onion (sliced thinly for a mild pungency)
- Protein: 1 can of chickpeas (garbanzo beans), rinsed and drained.
- Spices & Herbs:
- 1 tablespoon fresh basil (shredded) or 1 teaspoon dried basil
- 2 tablespoons vinegar
- 1 tablespoon extra virgin olive oil
- Salt, black pepper
Instructions
Step 1: Cook and chill the pasta
Bring a pot of water to a boil and cook the pasta according to the package instructions. The key to this salad is to cook it for the minimum recommended time (about 9 minutes) so the pasta retains a firm, springy bite. After draining, immediately rinse the pasta under cold running water for about 3 minutes. This helps it cool quickly and prevents the pieces from sticking together.
Step 2: Prepare the vegetables
Place all the prepped vegetables and chickpeas into a large bowl. Sprinkle with basil, a pinch of salt, and black pepper so the vegetables absorb some seasoning beforehand.
Step 3: Make a simple dressing
In a small bowl, whisk together the olive oil and vinegar until fully emulsified, forming a glossy, light-brown dressing.
Step 4: Toss and enjoy
Add the cooled pasta to the bowl of vegetables. Drizzle the dressing over the top and gently toss so each spiral of pasta is evenly coated with the aromatic sauce.
